The butter honey mixture gives the meat a delicious flavour and add a rich, dark crust to the skin.
Ingredients
1 oven ready turkey, 8 to 10 lb 4.5 kilos
1 apple, peeled
1 onion, peeled
1 potato, peeled
salt and black pepper
a thick slice of lemon
6oz 170g thick honey
Method
1) place inside the turkey the apple, onion and potato and season lightly.
2) place the turkey in a roasting tin and rub the skin lightly with the lemon.
3) melt the butter and honey together, stirring, and pour the mixture over the turkey.
4) allow to stand for about 60 minutes, spooning over the butter and honey mixture frequently
5) set oven to 400F Mark6
6) roast for 30 minutes, basting from time to time.
7) reduce oven to 350F or mark 4 and roast for a further 30 minutes basting from time to time
8) cover with foil and continue cooking until the juices run clear when a skewer is pushed into the thickest part of the leg, for the last 20 minutes of cooking remove the foil to crisp the skin.
leave to rest foe 15 minutes before carving.
