Ingredients
16 baking potatoes, peeled and cut into quarters
2 tbsp plain flour
150g 5 oz goose fat or dripping
3 tbsp sunflower oil
Method
Preheat the oven to 190° C Gas 5
1) cover the potatoes with cold water and boil for exactly 2 minutes, drain the potatoes well, toss in the colander to fluff, sprinkling over the flour as you go
2) place a large roasting tin over a high heat, then tip in the fat and oil, when sizzling, put in the potatoes, then gently cook until the potatoes are evenly browned all over, for about 5 minutes
3) roast in the oven for 20 minutes, then turn them over, place the tin over the hob to heat the oil, then return to the oven, and cook for another 20 minutes, turn the potatoes again season to taste, place the tin over the hob to heat the oil again, then return to the oven for the last 20 minutes.
